Smashed Chickpea and Artichoke Sandwich Recipe
When you try to eat a healthy diet, the options for packed lunches are limited. Add the plant-based factor to that equation, and you have even fewer options! Salads and soups can be tricky to transport, and without a fridge or a microwave they’re not very enjoyable.Sandwiches, on the other hand, are portable, easy to eat, and they don’t take up much space. This smashed chickpea and artichoke sandwich takes very little time, and yet it has all the nutrients you need to get you through the day. Whether you take it to work, to a picnic, or to a hike – it’s a winning combination or flavour and sustenance!

Ingredients
- ½ can Chickpeas drained and rinsed
- 1 tbsp Lemon juice approx. ¼ lemon
- ½ Sweet white onion or red onion
- 1 tbsp Sesame oil
- ¼ tsp Garlic powder
- Salt and pepper to taste
- 4 Slices of bread
- 100 grams Artichoke hearts in oil or brine quartered
- 1 Tomato sliced
- Mixed lettuce
Instructions
- Add chickpeas into a bowl, along with onions, garlic powder, lemon juice and oil. Gently mash everything together with a fork until chunky. Taste and season with salt and pepper.
- Lightly toast your bread slices in a toaster or oven.
- Once the bread is done, spread some smashed chickpea mixture on one slice. Add sliced tomato, artichokes, and lettuce. Close the sandwich, cut it in half and enjoy!
Notes
- It’s a great option for a packed lunch that doesn’t get soggy after a few hours.
- If you have a sesame allergy, use olive oil
